
Pancake Day
Proper old fashioned English pancakes, berries, maple syrup & lemon

Shrove Tuesday or Mardi Gras
Marks the day before Lent. This is one of the simplest recipes to make. All you need is eggs, butter, milk and flour. If you are feeling brave enough, oh go on, try tossing the pancakes.
Ingredients
For 10 pancakes
1. 6 eggs cracked into a measuring jug
2. Equal quantities by volume of milk to eggs
3. Equal quantities by volume of flour to eggs
4. 30g melted butter
5. Maple syrup or sinful caster sugar
6. 1 Lemon cut into wedges
7. Mixed berries
Method
Whisk the eggs in the jug
Add the milk and whisk
Add the flour and transfer into a bowl and whisk until smooth, you should get the consistency of double cream
Melt the butter in your frying pan on a low heat
Pour into the pancake mix
Wipe the pan with kitchen paper and reserve the paper for greasing the pan for each pancake you make
Turn the heat up to medium/high
Pour the pancake mix back into a clean jug
Pour a light coating of the batter into the pan
Move the pan around to get an even pancake
Cook for a couple of minutes on one side
Go on, I dare you to toss it over, now cook for about another minute/and a half
Roll up the pancakes and serve with maple syrup, berries and lemon
